Not all salmon are created equal

Imagine treating yourself with the best kind of salmon freshly caught in New Zealand’s fresh waters? Like the idea? Your pets would love to eat king salmon too!

For anyone who loves to eat fish, salmon is often the fish of choice. Whether it’s an enticing red-orange fillet, beautifully marbled steak, or melt-in-your-mouth fatty belly, salmon is sure to satisfy even the most discerning palate.

However, not all salmon species are created equal. Each has a unique flavor, texture, and even varying nutritional benefits. Aside from the difference in species, there are also environmental factors that can change a salmon’s taste, like:

  • Where it is caught
  • Water temperature
  • The season
  • The types of food available in its habitat

Thanks to a perfect recipe of these conditions, a particular species of salmon rose through the ranks. This species is considered the ultimate gourmet treat by most 5-star chefs – the renowned Pacific King Salmon.

What makes this salmon the “King”?

King salmon, also known as Chinook salmon, is a prime wild Pacific salmon. It is the largest species in the Pacific salmon genus Oncorhynchus. King salmon can grow up to 39 inches, a lot larger compared to pink salmon, the smallest Pacific salmon species, which grows only up to 30 inches. Now that’s a big fish!

Anglers describe king salmon as a strong and hard-fighting fish, befitting of its name. They rarely give up easily, and frequently breach during the catch. Instead, they’ll put up a fight by taking your hook deeper into the ocean, making it more difficult and time-consuming to catch.

Saltwater or Freshwater? That is the question

King salmon is an anadromous fish, which means that it can adapt and live in both fresh and salt water. Despite being born in freshwater, a young king salmon will travel to the oceans where it will spend most of its time growing up. When it’s old enough to spawn, it swims upstream – going back to the freshwater of its origin where its journey will end.

Upon reaching its destination, a female salmon spawns thousands of eggs in multiple nests of gravel while the male salmon fertilizes the eggs. During this spawning process, both the male and female refrain from eating. Their bodies gradually become weaker and after they use all their energy, they die.
