The potato is also known for its carbohydrate content, mostly in the form of starch. Resistant starch, the portion of starch that remains undigested after passing through the stomach and small intestines, offers the same health benefits as fiber. It provides bulk, improves glucose tolerance and insulin sensitivity, offers protection<\/span> against colon cancer, lowers plasma cholesterol and triglyceride concentrations, and increases satiety (potatoes are ranked highly on the satiety index, meaning that one will require less potatoes compared to other foods to achieve the same satiety level). Naturally, potatoes are also found to contain very little fat, with only less than 0.2% fat content.<\/p>\n
